Pepper is one of the most popular, powerful, oldest spices, exotic aroma, flavor and has a pungent odor. It was used in special dishes in the early Middle Ages and has been a staple in Asian cuisine, especially India since ancient times. The latter was used as currency and as a sacred offering. It was used in biblical times and the ancient Romans and Greeks. Pepper’s specialty is that it can be processed differently the same fruit to produce four types of peppercorns: white, red ,black, and green. The mesocarp has some sugar and volatile aromatics, white pepper has a different flavor, preserving the sharpness. Of these, black pepper is the most common, while white pepper is used in some kitchens. The outer shell or mesocarp is removed to produce white pepper.
